Like I Need an Excuse to Drink

Someday, I hope to be able to once again enjoy an alcoholic beverage on occasion — while working to boot this stupid candida, all alcohol is strictly off limits. It’s almost worse than pregnancy. At least while I was preggers, I had a glass of wine now and then towards the end of the pregnancy. Oh well, the sacrifice is going to be totally worth it! I just have to keep telling myself that.

In the mean time, I came up with a suitable substitute for one of my favorite summertime coolers: the mojito. I’ve got fresh mint growing in the garden, a bag of organic limes from Trader Joe’s and an iSi seltzer maker; but the secret ingredient is in the Vanilla Stevia. It kinda makes it taste like there’s rum in it… sort of. And if you want to actually get buzzed, throw some rum in and have one for me.


Sugar-free Virgin Mojito


Juice of 1/4 Lime
4 Fresh Mint Leaves
about 8 -10 drops Vanilla Liquid Stevia
Club soda or seltzer water
a couple of ice cubes


In a low ball, squeeze the lime wedge into the glass and muddle the mint leaves in it until the mint oils are released. Drop the stevia in the glass and top with ice and seltzer. Pretend it actually has booze in it and try not to drink the whole thing in 2 minutes.
