Paleo Pizza Crust You Can Hold!!

I’ve made some delicious paleo pizza crusts, but most of them have lacked the consistency to pick up a slice and eat it — requiring a knife and fork. I set out to make one that you could hold in your hand… and I did it!!!

The following recipe makes a 13″ round crust. And I guess you can’t really call it paleo since I used cheese for topping, but you can use whatever toppings you desire, and the paleo police aren’t breaking down my door… so sue me!

1/2 cup arrowroot
1/4 cup coconut flour
1/4 cup almond flour
1/4 tsp salt
1.5 tsp baking powder
1.5 Tbs psyllium husk powder (It MUST be powder)
1 Tbs flaxseed meal
1/4 tsp garlic powder
3 Tbs ghee or melted coconut oil
3 eggs

Preheat the oven to 400°. And place parchment paper on a 13″ pizza stone. Combine dry ingredients and mix wet into dry. Dough will be very wet. Working quickly, place dough on parchment, and add a second sheet of parchment on top. Roll dough between two pieces of parchment until evenly spread over stone. Carefully peel back the top layer of parchment and bake for 12 minutes until set.

Then layer on your toppings and cook until your cheese is browned and bubbling (if you’re using cheese). I used sautéed onions and red peppers with fresh basil. It was delish!!
